Dextrose (a form of sugar) is added to conventional iodized salt as a stabilizer for the potassium iodide. While the amount is tiny, it's worth knowing your "pure" table salt contains added sugar.

What starts as a mineral-rich compound gets refined down to pure sodium chloride plus additives—a process that removes magnesium, potassium, calcium, and dozens of other trace minerals.

Performance Expectations

Taste difference: Many people notice unrefined salt tastes more complex and "minerally" compared to the sharp, one-note flavor of refined table salt. You may find you use slightly less because the flavor is more satisfying.

Texture: Coarser unrefined salts work beautifully in grinders but aren't ideal for baking where fine grain size matters for even distribution. Look for finely ground options if you bake frequently, or keep a small amount of fine unrefined salt specifically for baking.

Clumping: Without anti-caking agents, unrefined salt can clump in humid environments. A few grains of dry rice in the container helps, or simply use a grinder. This is a minor inconvenience, not a dealbreaker.
